monday meal.

last night we had small dishes as we felt hungry for a bite.
for starters i pulled out some beets and fennel bulb we'd bought at the farmer's market.
here is what i came up with......

roasted beets

cut beets and fennel bulb into bite sized pieces
throw into an oven-proof dish and drizzle with olive oil, salt, and pepper.
cook at 350 degrees.
open oven occasionally to stir contents and check desired doneness.
serve over a handful of arugula.
top with crumbled goat cheese.
