monday meal.

one of our favorite meals...usually during cold weather....is risotto.  
because we still have onions from d's parents i loaded it up with double the onion last night.  
onions are kinda our thing.  
love them.

onion risotto
olive oil around the pan
1 1/4 c arborio rice
4 c vegetable stock
2 onions (chopped)
1/2 c white wine
1/2 c milk
2 handfuls grated parmesan
salt and pepper to taste

saute onions in olive oil.
add uncooked rice and saute until translucent.
add white wine, stir.
pour in 4 cups vegetable stock, stir.
check back every 3-4 minutes to stir.
when liquid has been absorbed (20 minutes or so) add the parmesan, milk, salt and pepper.
serve in bowls, top with a bit more parmesan.

delicious and filling on a cold evening, though we found it to be perfectly nice on a warm summer night, too.
