a quick meal.

you know how it is, dinners become rather repetitive at times.
now with our new house guest, we've been browsing through our cookbooks and trying some new stuff.
this is one that d loved....it's just his thing, i could tell the moment i saw it.

gorgonzola linguine with toasted walnuts

12 oz linguine
2 T butter
2 cloves garlic, finely chopped
2 T all-purpose flour
1/2 t salt
2 c half-and-half
1/2 c dry white wine or veggie stock
1 c crumbled gorgonzola cheese (4 oz)
1/4 c choped walnuts, toasted

1. Cook and drain linguine as directed on package
2. Meanwhile, in 3-quart saucepan, melt butter over medium heat. Add garlic; cook, stirring occasionally, until golden brown. Stir in flour and salt. Cook, stirring constantly, until smooth and bubbly. Remove from heat. Stir in half-and-half and wine. Cook, stirring constantly, until mixture thickens slightly. Reduce head to medium-low. Stir in cheese. Cook, stirring occasionally, until cheese is melted.
3. Add linguine to sauce; toss. Garnish with walnuts.
