homemade ice cream.

i've been making ice cream lately.
for some reason i thought it would require special ingredients and be a lot harder than it is.
the recipe i've been tweaking doesn't even call for cream.
and it's delicious...especially when made just before eating or keeping in the freezer for just an hour or less.

coffee ice cream
2 c whole milk
2 t instant espresso powder
100 g sugar
4 egg yolks
1 t corn starch
1 t vanilla
heat the milk and two teaspoons espresso powder on the stovetop.
in a bowl mix the egg yolks, sugar, and corn starch.
slowly pour the hot milk on the egg mixture while whisking.
add the vanilla.
heat gently, stirring continually until it thickens.
let cool then pour into an ice cream maker.
